I like to put bananas in the freezer if they start to ripen quickly. I love to through them in smoothies, muffins, etc,. Here is a new recipe I'm going to try.
BANANA OATMEAL CAKE
1 1/2 c. sugar
3/4 c. butter
3 eggs
1 1/2 tsp. vanilla
2 c. flour
3/4 tsp. baking powder
2 1/4 tsp. soda
3/4 tsp. salt
3/4 c. buttermilk
2 c. oatmeal
2 c. mashed bananas (5 very ripe bananas)
1/8 c. chopped nuts
Cream butter and sugar, add vanilla, then eggs (slightly beaten) one
at a time. Sift together dry ingredients and add alternately with
buttermilk. Stir in oatmeal and bananas and nuts.
Pour into a greased and floured 9 x 13 x 2 inch pan. Bake at 350
degrees for 30 to 45 minutes or until done. Cream cheese frosting on this
cake is delicious.
